Easy Peasy Thai Red Prawn Curry recipe

This is a very simple prawn curry that is brilliant for serving up at a dinner party as it requires very little work. If you want to, add more or less curry paste depending on your personal preferences.


  • 400ml coconut milk
  • 24 large prawns, peeled and de-veined
  • 2 tbsp. red Thai curry paste
  • 1 tbsp. fish sauce
  • 1 red chilli


  1. Finely chop the chilli, after removing the seeds.

  2. Combine coconut milk, curry paste, fish sauce and red chilli in a frying pan until simmering.

  3. Add the prawns and simmer for around 15 minutes, until they turn pink and the sauce has thickened.

Serve over fluffy plain rice or fry off some rice with onion and ginger to serve with the curry. Recipe serves 4.
