Monkfish Thai Red Curry recipe

Monkfish is a wonderful fish for using in curries as it is meaty and stands up well to being cooked for long periods of time. This recipe is very simple but is super tasty - serve it over rice or noodles.

Ingredients:

  • 1 onion
  • 1 red pepper
  • 3 tbsp. red Thai curry paste
  • 350g boned, skinned and cubed monkfish
  • Juice of half a lime
  • 1 tbsp. fish sauce
  • Small handful chopped fresh coriander
  • Oil to fry

Directions:

  1. Finely slice the onion. Halve the red pepper, remove the seeds and pith and thinly slice the pepper.

  2. Heat the oil and add the onion. Cook until starting to soften, around 2-3 minutes, then add the pepper and cook for another five minutes.

  3. Stir in the curry paste and cook for one minute, then stir in the coconut milk.

  4. Once simmering, add the monkfish and simmer 8-10 minutes until the fish is fully cooked and no longer opaque in the centre.

  5. Stir in the lime juice, fish sauce and the coriander before serving.

You could also use green curry paste in place of red curry paste if you prefer. Half fat coconut milk can also be used if you want to make this a little healthier.
