Massaman Curry recipe

This massaman curry calls for beef, although you can used chicken or lamb just as easily. Vegetables can also be used in place of the meat if you want to serve this to a vegetarian.

Ingredients:

  • 450g beef
  • 250ml coconut milk
  • 200ml water
  • 2 tbsp. Massaman curry paste
  • 3 bay leaves
  • 2 tbsp. brown sugar
  • 1 cinnamon stick
  • 1 tbsp. tamarind paste
  • 1 potato
  • 1/2 tsp. ground cardamom
  • Pinch salt

Directions:

  1. Cut the potato into small cubes and cube the beef.

  2. Heat the coconut milk and curry paste in a saucepan and simmer for five minutes.

  3. Add the beef and the water and stir well. Add the ground cardamom, cinnamon stick, bay leaves, sugar, salt and tamarind paste.

  4. Simmer for 30 minutes, then add the potato and simmer for 15-20 minutes until the potato is tender.

Remove the cinnamon stick and bay leaves before serving. Sprinkle with freshly chopped coriander and chilli to serve. This recipe serves 4.
