Thai Green Curry Paste recipe

This simple recipe for green curry paste will ensure you never buy shop-bought curry paste again! Recipe makes enough for a hot curry for 8 people, although it will go further if you prefer your curries mild.


  • 4 medium green chillies
  • 2 shallots
  • 1 5cm piece of ginger root, minced
  • 1 5cm piece of galangal, minced
  • 2 garlic cloves
  • 2 stalks lemongrass
  • Small bunch fresh coriander
  • 1 lime, zest and juice
  • 8 kaffir lime leaves
  • 1 tbsp. coriander seeds
  • 1 tsp. ground cumin
  • 1 tsp. black peppercorns
  • 1 tbsp. fish sauce
  • 2 tbsp. olive oil


  1. Slice the chillies in half, remove the seeds with the back of your knife then chop the flesh.

  2. Put all ingredients into a food processor and process until a coarse paste forms. Mixture will keep in the freezer for 2 months in the freezer.

Make double of this so that you have plenty of leftovers.
