Coconut and Lime Rice recipe

This rice dish is the perfect accompaniment to all Thai curries. Save a whole lime leaf to use on top of the rice as a garnish.


  • 180g jasmine rice
  • 4 tbsp. coconut milk
  • 1 tbsp. butter
  • 2 lime leaves


  1. Put the rice into a saucepan with 375ml water. Boil until the water has all absorbed into the rice.

  2. Meanwhile, very finely chop the lime leaves.

  3. To serve, stirring over a low heat, add the coconut milk, butter and lime leaves to the rice. Once hot enough to serve, divide between four plates.

Use coconut cream if you can't get hold of coconut milk, and the juice of half a lime if you cannot find lime leaves. Recipe serves 4.
