Beef Meatball Thai Red Curry recipe

This is a great dish to serve to the whole family and plus, you can cook it all in one pot so it saves on the washing up! Serve with chunks of chapatti to mop up the juices or with some fluffy rice.

Ingredients:

  • 500g beef mince
  • 1 egg
  • 1 red chilli
  • Thumb-sized piece root ginger
  • 1 tbsp. oil
  • Salt and pepper
  • 1 1/2 tbsp. red Thai curry paste
  • 400ml coconut milk
  • 200ml water
  • 225g tin bamboo shoots, drained
  • 150g fine green beans
  • Juice of one lime
  • Small handful freshly chopped basil

Directions:

  1. Finely chop the chilli, removing the seeds. Add to a bowl with the beef mince. Mince the ginger and stir this in, and add the egg. Season well and then form the mixture into meatballs.

  2. Heat the oil in a frying pan and add the meatballs. Fry for a few minutes, until browned and then remove from the pan and tip onto a plate.

  3. Add curry paste to the pan you cooked the meatballs in. Cook for one minute, then add the coconut milk and water. Stir well.

  4. Bring to the boil, then reduce to a simmer and add meatballs, bamboo shoots and fine green beans.

  5. Simmer for five minutes, until the meatballs are fully cooked through, then add lime juice and basil to serve.

Thinly sliced red and green peppers would be a lovely addition to this recipe. This recipe will serve 4.
